Ever wondered about egg??

It's a title of a nice BBC TV show about cookery, called "Ever wondered about ...", where not only how to cook showed, but also a little bit of history and science behind it. Last weekend was about egg. One dish that Paul, the presenter, showed is the egg benedict, i.e. a toast, a slice of ham, a pouched egg and served with hollandaise sauce.

A bit of wondering about egg benedict, I search on the Internet and found the discovery about this dish:

In 1894, Lemuel Benedict, a Wall Street broker, who was suffering from a hangover, ordered “some buttered toast, crisp bacon, two poached eggs, and a hooker of hollandaise sauce” at the Waldorf Hotel in New York.
